GULFPORT, Fla. – Pop Goes the Waffle in Gulfport has been open on Tangerine Avenue South since Mid-March.
We visited the Founder and Chief Waffle Officer Sara Fludd at her new digs and she offered us one of her three favorite sauces – she calls them the mother desert sauces: chocolate, caramel and lemon curd.
All hail the lemon curd.
The sauce of the summer.
Lemon Curd
- 4 lemons zested and juiced
- 1.5 cups granulated sugar
- 1/4 pound room temperature salted butter
- 4 eggs
Directions:
Combine butter and sugar in food processor until blended.
Add eggs one at a time, then add zest and juice mixture.
Pour mixture into sauce pan over medium heat and whisk constantly until mixture thickens like pudding. (Make sure you heat the mixture to 170 degrees.)
Pour into a container and refrigerate overnight or until completely cool.
Curd can be kept refrigerated for up to two weeks.
